Apple pie without eggs

1 ½ cup of sugar

1 ½ cup of flour

1 ½ cup of semolina (grit)

1 teaspoon baking powder

2 lb apples

Peel apples and rub away on grate on a big eyelet. Dish or pan grease with margarine or spray with special unsticking oil and sprinkle with crumbs. Mix together, sugar, flour, semolina and baking powder. Then first fill the bottom with a little mixture, than apples, mixture and apples again. On top spread a little pices of butter. It will make apples more moisture and not burned. Set oven for 356F for about 45 minutes. Every oven is different , it can take longer to bake. You will know its ready by the golden color. Take out of oven and let it stand to cool off, you can sprincle some powder sugar on top to make it look nicer and sweeter.

Carrot Muffins

 Makes 12 muffins

1 1/2 cups flour

1 teaspoon baking powder

1 teaspoon of baking soda

1 teaspoon cinnamon

1/4 teaspoon nutmeg

2 eggs

3/4 cup granulated sugar

5 tablespoons vegetable oil

1/4 cup of milk

1 1/2 cups of grated carrot

1/4 cup of chopped walnuts (optional) 

1/4 cup of raisins

Preheat oven to 375 F. Mix flour, baking soda, nutmeg, cinnamon and baking powder and set aside. Then mix well sugar and eggs together, add oil, milk and grated carrots. Blend it, add the other mixture until ingridiens get moistened. Bake for 18-20 minutes until golden. Best to serve warm.

 

 

Easy yogurt cake

 

3 eggs

½ cup of natural yogurt or kefir

1 cup fo sugar

1 1/3 cup of flour

1/3 cup of oil

2 teaspoons of vanilla sugar

1 spoon of baking powder

Separate yolks from the whites. To yolks add yogurt, baking powder and vanilla sugar. Stir it. Beat down whites untill they get stiff, you can add a little salt, they will beat up easier. Then add sugar and beat down untill sugar melts. Add yolk/yougurt mixture , flour, oil and carefully stir. The grease very good bottom of pan/form and sprinkle crumbs, it won’t stick. Set oven for 356F and bake for about 40 minutes. Its best fresh, can’t stand long in a fridge.

APPLE SOUFFLE

 Serves 4

6 egg whites

1/3 cup of sugar

1 teaspoon vanilla

3 cups of applesauce

1/2 cup of coarsely chopped walnuts (optional)

Preheat oven to 350 F. Use I quart baking or souffle dish and lightly oili with butter and sprinkle evenly with sugar. Beat the egg whits until they form foam, add sugar and vanilla. Beat some more until firm, but not dry. Fold egg white genetly into applesauce  (add nuts if you use them) Pour immediately into baking dish. Bake for 20 minutes or until light brown color. Best to serve with frozen yogurt and crisp cookie.
